Keto Recipes: Pancakes

There is nothing like waking up on a Saturday morning to a stack of pancakes - Am I right? I gotta tell you that my love for pancakes runs deep, real Deep. For my birthday I shocked my family by asking to have a birthday breakfast specifically around pancakes. Our typical birthday dinner requests lean more towards the Italian tyle dinner, so yeah, my pancake needs were weird.

So, now that you know my love of the pancake it shouldn’t come as a surprise now that as I live this Keto lifestyle my one craving is for pancakes. Let’s be honest, I don’t really discriminate against any type of pancake as long as it has those typical pancake qualities - flat cake made of thin batter and cooked (as on a griddle) on both sides (thanks, Merriam-Webster for the definition. ) The more you know.

For anyone out in the Keto universe looking for that delicious pancake treat I’m going to share it with you right now.

Keto Pancake Recipe:

INGREDIENTS

1 c. almond flour

4 oz. cream cheese, softened

2 large eggs

1 tsp. cinnamon

.5 c. heavy cream

1 tsp. peanut butter (any nut butter can be used here)

Butter, for frying and serving

DIRECTIONS

  1. In a medium bowl, whisk together almond flour, cream cheese, eggs, and cinnamon until smooth.

  2. In a nonstick skillet over medium heat, melt 1 tablespoon butter. Pour in about 3 tablespoons batter and cook until golden, 2 minutes. Flip and cook 2 minutes more. Transfer to a plate and continue with the rest of the batter.

  3. While pancakes are cooking: In a small bowl whisk heavy cream. Once whipped cream begins to stiffen add your nut butter and continue whisking.

  4. Serve topped with whipped nut butter and perhaps your favorite keto syrup (treat yourself)
